There are just some days when I want a tasty dip for my celery or cucumbers, or something to put on a salad or a soup topper.  My version of guacamole hits that spot for me.  It’s quick, it’s easy and it actually stores pretty well.


Ingredients:

  1. Peel avocados and remove pit.
  2. Place in mixing bowl and mash with a fork until soft and blended
  3. Add Greek yogurt, salsa and lime juice to bowl mixing thoroughly.
  4. If you are storing put the 2 pits back into the bowl- that and the limejuice will help retain the brighter green color.

Serve with fresh veggies, or on top of anything that you think it would taste good on top of.  If you really must, you can make a few of your own tortilla chips by baking the high protein/high fiber tortillas for 10 minutes on each side at 350 degrees until crisp and then break them up into chips.  Be sure to count the extra calories from the tortillas.

Serving size of guacamole is 2 tablespoons and each serving is about 20 calories with a trace of protein.  Used sparingly it is a healthy alternative to high calorie sour cream based dips, with the calories coming mostly from the monounsaturated good for you fats in the avocado which is also full of potassium.
