Lynn’s Sunflower Seed and Sage Crusted Chicken
Thanks go out to Lynn for sharing this delicious variation on “oven fried” chicken. It takes only 5 minutes to prepare and about 20 minutes to bake. This recipe is intended as a single serving.
Ingredients:
- 1 egg white beaten
- 1 Tablespoon sesame seeds
- 1 Tablespoon sunflower seeds chopped
- 1 teaspoon fresh sage leaves chopped
- Dash of ground black pepper
- 5 ounces raw chicken breast sliced thin and pounded flat
Directions:
- Preheat oven to 400 degrees F
- Line a baking sheet with parchment
- Combine sesame seeds, sunflower seeds, sage and pepper in a small bowl
- Place egg white in a small shallow bowl
- Coat the chicken tenders entirely with egg white, then dip in the seed mixture coating both sides
- Transfer to 1 side of the baking sheet.
- Mist the surface of the chicken with olive oil cooking spray
- Flip the tenders with a fork and mist the other side.
- Bake 15-17 minutes until chicken is cooked through flipping the tenders at the halfway point.
Serve with your favorite side and enjoy!
