Mediterranean Egg Muffins

Mediterranean Egg “Muffins”

If you love olives, feta cheese and the spices of Greece then these are for you.

Ingredients:

Directions:

  1. Preheat oven to 375 degrees
  2. Spray a 12 cup muffin pan with non stick spray
  3. Place one round of Canadian bacon in the bottom of each muffin “cup”
  4. Add 1/12 of the chopped spinach, mushrooms, and bell pepper to each cup
  5. Whisk together the eggs, egg whites, onion, garlic, oregano, basil, thyme, lemon pepper and red pepper flakes and divide among the muffin cups
  6. Top each cup with 1/12 of the feta crumbles and a few olive slices
  7. Bake at 375 until eggs are done, about 25 minutes.  Do not over cook
  8. Remove from oven, cool, and remove from muffin pans
  9. Serve warm, or cool completely, wrap each individually and store in refrigerator.

10. Reheat on 50% power in microwave for about 90 seconds (time and temperature vary by microwave)
