Mediterranean Egg “Muffins”
If you love olives, feta cheese and the spices of Greece then these are for you.
Ingredients:
- 4 Eggs
- 2 3/4 cups Egg Whites
- 12 Rounds of Jones Uncured Canadian Bacon
- 2 cups Spinach, Chopped
- 2 oz Red Bell Pepper, Chopped
- 1.5 oz Crimini Mushrooms, Chopped
- 4 oz Feta Cheese, Crumbled
- 4 tablespoons Olives, Sliced
- 2 tablespoons Dried Onion Flakes
- 1/2 tablespoons Dried Granulated Garlic (Or Garlic Powder)
- 1 tablespoons Parsley Flakes
- 1 teaspoon Basil
- 1 teaspoon Thyme
- 1 tablespoon Oregano
- 1 teaspoon Lemon Pepper
- Crushed Red Pepper Flakes to Taste (We Like It Spicy)
Directions:
- Preheat oven to 375 degrees
- Spray a 12 cup muffin pan with non stick spray
- Place one round of Canadian bacon in the bottom of each muffin “cup”
- Add 1/12 of the chopped spinach, mushrooms, and bell pepper to each cup
- Whisk together the eggs, egg whites, onion, garlic, oregano, basil, thyme, lemon pepper and red pepper flakes and divide among the muffin cups
- Top each cup with 1/12 of the feta crumbles and a few olive slices
- Bake at 375 until eggs are done, about 25 minutes. Do not over cook
- Remove from oven, cool, and remove from muffin pans
- Serve warm, or cool completely, wrap each individually and store in refrigerator.
10. Reheat on 50% power in microwave for about 90 seconds (time and temperature vary by microwave)
