Mediterranean Frittata
Here’s a 4 serving breakfast with lots of great flavors.
Ingredients:
- 16 ounces egg substitute
- 3 ounces crumbled feta cheese
- 1 cup chopped baby spinach
- 2 ounces cooked or smoked salmon flaked
- 5 olives diced
Directions:
- Preheat oven to 350 degrees
- Spray a 9x9 pan bottom and sides with non-stick spray (I use coconut oil spray)
- Pour in egg substitute
- Add the other ingredients and stir with a fork to evenly distribute
- Bake in preheated oven for around 30 minutes or until center springs back to touch to let you know it’s done
- Cool for a few minutes, slice and serve
