Mexican Style Chicken Soup
As the days get shorter and the air gets crisper I turn to soups, stews, chili, and crock pot meals. This one for chicken soup with a bite doesn’t take long to put together but will warm you from the inside out.
Ingredients:
- 1 teaspoon olive oil
- 1 large yellow onion diced
- 2 garlic cloves chopped
- 1 jalapeno pepper, seeded and finely chopped
- 2 teaspoons chili powder
- 1 teaspoon oregano
- 1 teaspoon cumin
- 1 quart chicken broth ( I use reduced sodium)
- 1 can green chiles (4.5 oz.)
- 2 cups frozen corn
- ½ teaspoon sea salt
- 2 cups shredded cooked chicken
- 1/3 cup fresh chopped cilantro
- 1 ripe avocado sliced
- Lime wedges for serving
Directions:
- In a soup pot heat the olive oil on medium high.
- Add the onion, garlic and jalapeno and cook, stirring for about 5 minutes until the onion is translucent
- Add the chili powder, oregano and cumin and cook for one minute more
- Stir in the broth, tomatoes, chiles, corn and salt. Bring to a boil then immediately reduce heat and simmer for 20 minutes
- Add the chicken and simmer for 10 minutes more
- Stir in the cilantro
- Ladle into individual bowls and serve garnished with avocado slices and a lime wedge
