Mini Turkey Meat Loaves
These are great because you can make lots, freeze them individually and use them as needed for lunches or dinners.
Ingredients:
- 1 ¼ cup chopped onion
- 7 tablespoons dry breadcrumbs
- 2 ½ tablespoons fresh chopped parsley
- 2 ½ teaspoons Worcestershire sauce
- ½ teaspoons sea salt
- ¾ teaspoon dried oregano
- ¼ teaspoon fresh ground pepper
- 20 ounces ground turkey
- 3 large egg whites
- 6 tablespoons ketchup
- ½ teaspoon hot pepper sauce (Tabasco)
Directions:
- Heat a skillet over medium high heat and spray with cooking spray.
- Add onion to pan and sauté around 5 minutes until lightly browned
- Remove from heat and cool slightly
- Combine onion, breadcrumbs, parsley, Worcestershire sauce, salt, pepper, oregano, ground turkey, and egg whites in a large bowl
- Stir in 4 tablespoons ketchup
- Spoon about ½ cup of meat mixture into 8 muffin cups coated with cooking spray (or line muffin tin with paper cupcake holders)
- Combine remaining 2 tablespoons ketchup with the hot sauce in a small bowl and brush the mixture over the meat loaves tops
- Bake at 350 degrees for about 30 minutes until a meat thermometer measures 165 degrees as the internal temperature of one of the loaves
- Cool and remove from muffin pan for storage or serve hot.
