Mini Turkey Meat Loaves

These are great because you can make lots, freeze them individually and use them as needed for lunches or dinners.


Ingredients:

Directions:

  1. Heat a skillet over medium high heat and spray with cooking spray.
  2. Add onion to pan and sauté around 5 minutes until lightly browned
  3. Remove from heat and cool slightly
  4. Combine onion, breadcrumbs,  parsley, Worcestershire sauce, salt, pepper, oregano, ground turkey, and egg whites in a large bowl
  5. Stir in 4 tablespoons ketchup
  6. Spoon about ½ cup of meat mixture into 8 muffin cups coated with cooking spray (or line muffin tin with paper cupcake holders)
  7. Combine remaining 2 tablespoons ketchup with the hot sauce in a small bowl and brush the mixture over the meat loaves tops
  8. Bake at 350 degrees for about 30 minutes until a meat thermometer measures 165 degrees as the internal temperature of one of the loaves
  9. Cool and remove from muffin pan for storage or serve hot.
