No Mess Salmon, Asparagus, and Mango Peach Salsa

I love grilling.  I hate cleaning the grill.  This foil packet cooking gets me fast prep time, no oven time AND no clean up time while we get to enjoy tasty fish and veggies.  If you can't grill it, pop the foil packet in the oven for 30 minutes at 400 degrees and it will be just as good.

Ingredients:

  1. Preheat grill (or oven)
  2. Tear off two pieces of aluminum foil about 20 x 18 and place them crosswise over each other
  3. Wash and trim the asparagus and lay it out on the foil
  4. Twist a few grinds of lemon pepper over the asparagus
  5. Top the asparagus with the salmon filet
  6. Add a few grinds of lemon pepper and a light “dusting” of dried chipotle pepper to the salmon
  7. Top the salmon with the salsa and then seal the foil making a “tent” of it
  8. Grill for about 20 minutes, or cook in the oven for about 30 and remove from heat
  9. Carefully cut the top of the foil (hot steam will escape) and serve hot
  10. Enjoy!
