Northwest meets Southwest Omelet
I thought it was time that some salmon met some Hatch green chiles. That’s all!
Ingredients:
- 2 Eggs
- 4 Egg Whites (yes i just throw away the yolks)
- 6 tablespoons Hatch Green Chilies, Chopped
- 2 ounces Trader Joe’s Lite Shredded Mozzarella Cheese
- 2 ounces Smoked Sockeye Salmon Flaked
Directions:
- Spray a 10 inch skillet with non stick spray (I use Coconut Oil Spray because NOTHING sticks to it)
- Heat to medium/medium high
- In a bowl whisk together the 2 eggs and 4 egg whites
- Place in pan and cook covered until almost set (watch carefully- your pan type and stove will determine the time - perhaps two minutes)
- Add the chilies, salmon and cheese to 1/2 the pan and fold the other half the eggs over it
- Cover and cook for about another minute- just to melt the cheese
- Remove from heat, slide onto plate and serve
