OPA Chicken Salad
I love using leftover rotisserie chicken. This one made lunches full of feta, dill and olive flavors.
INGREDIENTS:
- 18 oz Rotisserie Chicken, Diced
- 5 oz Diced Celery
- 1/4 cup Diced Onion
- 1.9 oz Diced Olives
- 1 tablespoon Dried Dill
- 12 tablespoons OPA Feta Dill Dressing
DIRECTIONS:
- Mix all ingredients together in a large bowl. Portion and refrigerate
- This can be eaten over salad greens, in a ripe tomato “bowl”, scooped up with mini sweet peppers, wrapped in lettuce, wrapped in a slice of cheese, or any way you choose
