One Pan Chicken Cacciatore
It’s great to serve dinner to the family and have only 1 pan to clean up, or prep for several dinners or lunches for yourself. Either way it’s only one pan which is my kind of easy, especially when the results are delish.
Ingredients:
- 1 pound boneless skinless chicken breasts or tenderloins sliced
- 3 slices center cut bacon
- 1 cup onion coarsely sliced
- 8 ounces portabella mushrooms sliced thick
- 1/2 of each red, yellow and green bell pepper sliced
- 1 medium tomato finely chopped
- 3/4 cup Trader Joe’s Rustico Sauce
- 1/2 cup white wine
- 3 cloves garlic minced
- 1 tsp thyme
- 2 tsp oregano
- Sea salt and pepper
- Chopped basil leaves
Directions:
- Season the chicken slices with salt and pepper and cook until golden in a large skillet that has been sprayed with non stick spray. Transfer to a plate and set aside. The chicken is not completely cooked at this point
- Add bacon to the same skillet and cook to crispy on both sides. Transfer to a plate and set aside
- Spray the pan again and add chopped onion, peppers, mushrooms and sauté until the onion is tender
- Stir in chopped tomato, rustico sauce, wine, garlic, thyme, oregano, salt, pepper and chopped basil. Bring to a boil and cook over medium heat until liquid has evaporated a bit and sauce thickens
- Add chicken pieces and bacon back to the sauce. Cook for another 5-7 minutes until chicken is tender and cooked through
- Sprinkle with chopped basil and serve
- Can be served over spaghetti squash, zucchini noodles, or in a bowl by itself. Be sure to add the calories and protein for whatever you serve it over
- Can be topped with a tbsp of grated parmesan for an additional 20 calories and 2 grams of protein
