One Pot Turkey Unstuffed Peppers With Cauli Rice
Another weight loss surgery friendly meal that my whole family enjoyed. They went back for seconds.
Ingredients:
- 1 pound Ground Turkey
- 1 Package (16 ounces) Riced Cauliflower
- 14.5 ounce Can Tomatoes, Diced
- 8 ounces Chicken or Turkey Broth
- 8 ounces Marinara Sauce (I Used Trader Joe's Rustico)
- 6 ounces Shredded Lite Mozzarella Cheese (I Use Trader Joe's)
- 1 Medium Onion Finely Diced
- 3 Bell Peppers, (I Used Red, Yellow and Orange to Make It Pretty) Seeds Removed and Diced Large
- 4 Cloves Garlic, Minced
- teaspoon or 1 Chicken Bouillon Cube
- 2 teaspoons Worcestershire Sauce
- 2 teaspoons Oregano
- Dried Red Pepper Flakes to Taste (We Like It Hot)
- Pinch of Rosemary
- Pinch of Thyme
Directions:
- Spray a large skillet that has a good lid with olive oil spray
- Heat to medium high and brown the turkey, breaking it into small pieces as it cooks. When it is just about done, carefully drain the excess fat and then add the onion, bell peppers and garlic to the turkey. Mix well to combine.
- When the peppers have softened and the onion is becoming translucent reduce heat to medium and stir in diced tomatoes with juice, broth, marinara sauce, bouillon, Worcestershire sauce and seasonings.
- Bring to a boil then stir in the riced cauliflower. Reduce heat to low, cover and simmer for 20-30 minutes.
- Remove skillet from heat, stir ingredients, then add the shredded cheese and replace the lid. Allow it to stand covered for about 10 minutes, then serve and enjoy.
