Orange Protein Pancakes
I have made “pancakes” before with banana and egg. I wanted a different flavor this week and did not want to add it with fruit on top. a little orange zest goes a long way into making a delightful and protein rich breakfast treat. My family added their butter and syrup; I ate these just as they came off the skillet…yummy
Ingredients:
- 2 Small Bananas
- 1 Egg
- 8 Egg Whites
- Zest 1 Orange
- 1 teaspoon Cinnamon
- 1 teaspoon Vanilla
Directions:
- Place all the ingredients in a blender and blend until smooth
- Heat a skillet (I keep 2 small ones going) to medium high after spraying with non-stick spray. (Coconut oil spray works well)
- Pour in about 1/4 cup batter and cook until sides begin to dry and bubbles appear in center.
- Flip and cook for about a minute on the other side
- Remove pancakes as they are done and plate and cover to keep warm; or keep warm in a 150-200 degree oven. I even warm my plates in the oven
- Serve and enjoy! I added one slice uncured Canadian bacon for an additional 20 calories and 3.7 grams protein to my plate
