Oven Toasted Salmon
Salmon is one of my favorite fish choices. This recipe takes a few minutes to put together the marinade, but then it’s frig to oven the next day for dinner, and so tasty.
Ingredients:
- Six 3 ounce salmon fillets
- ¾ ounce minced garlic
- ½ Tablespoon sea salt
- ¾ teaspoon cumin
- ¾ teaspoon paprika
- 1 teaspoon coriander
- ¼ cup plus 2 Tablespoons white wine
- ¼ cup plus 2 Tablespoons olive oil
- 3 ounces fresh parsley leaves chopped
- 1/3 cup honey
- ¼ cup plus 2 Tablespoons fresh lemon juice
Directions:
- Combine all ingredients with the exception of the salmon in a bowl. Mix well
- Pour over salmon and marinate overnight in the refrigerator.
- Preheat oven to 325 degrees F. Remove fish from marinade and place in baking pan. Discard the marinade.
- Bake salmon for about 12 minutes until golden brown.
