Pancakes to Satisfy Me and Them
A slight twist to my flourless pancake recipe. Eggs were really cheap- $1.29 for 18 eggs at Costco so I used all 18 to make Sunday breakfast for four, or more if one of them has had weight loss surgery. I could only eat about 1/2 of a serving, and they required no butter, no syrup, just their own deliciousness for me.
Ingredients:
- 3 Whole Eggs
- 15 Egg Whites
- 3 Small Bananas
- 1 teaspoon Vanilla
- 1/2 teaspoon Cinnamon
Directions:
- Place all ingredients in a blender and blend to just mix, don't overblend
- Heat a pan to medium on the stove after spraying with non stick spray (to speed the process I had 2 pans going)
- Pour about 1/4 of a cup of batter into pan
- Cook until bubbles appear and the pancake looks about dry
- Flip over and finish cooking
- Remove from pan and repeat process.
- I keep my oven heated to 200 degrees and keep the pancakes warm in there as I make the entire batch, then I can serve everyone together
- Plate and serve with Brummel and Brown's “yogurt butter”, sugar free syrup or just as is.
