Parmesan Crusted Pork Tenderloin

Pork tenderloins are quick and easy to prepare, pack a great protein punch, and can be on the table from frig to plate in about ½ hour.  That means you can roast some asparagus, or cauliflower, to go with it at the same time.  This recipe is tasty, and you can adjust the seasonings to your favorites.

  1. Preheat oven to 375 degrees
  2. Pat the pork dry with paper towels and lightly season it with sea salt
  3. Mix together, in a small bowl, the cheese, cumin and fresh ground pepper, then transfer to a plate 
  4. Press the tenderloin into the cheese to get it to coat well.  Repeat on the other side.
  5. Bake in a shallow roasting pan for about 12 minutes
  6. Turn and bake for about 10 minutes more (pork should be ever so slightly pink in the center)
  7. Remove from oven, transfer to cutting board and allow it to rest for several minutes
  8. Cut into ½ inch thick slices and serve
