Passata Con Due Formaggi Casserole
In my quest to find yet another delicious way to prepare spaghetti squash I decided to make a casserole, and it was another hit. This one served two, however you can adjust the quantities and serve as many as you choose.
Ingredients:
- 2 cups of cooked spaghetti squash
- 1 cup of Classico Fire Roasted Tomato & Garlic Pasta Sauce
- 2 chicken sausage (mine happened to be habanero and cheese at 120 calories/18 grams protein each)
- ½ cup Fat Free ricotta cheese
- 4 Tablespoons grated parmesan cheese
Directions:
- Preheat oven to 350 degrees
- Spray and 8x8 pan with non stick spray
- Layer the spaghetti squash at the bottom of the pan
- Thoroughly mix the pasta sauce and ricotta cheese together and layer it over the spaghetti squash
- Slice the sausage into “coins” and place on top of squash and sauce mix
- Top all with 2 tablespoons of parmesan cheese
- Bake at 350 for about 40 minutes until thoroughly heated through
- Remove from oven
- Serve in bowls and top with the other 2 tablespoons of parmesan cheese
