Pepperoni Pizza Frittata

If it has the word pizza in it everyone will at least give it a try.  With pepperoni, olives and 3 cheeses this hits high on the mmmmm good meter.

Ingredients:

Directions:

  1. Preheat oven to 350 degrees
  2. Spray a 13 x 9 x 2 pan with non stick spray
  3. Line the bottom of the pan with the baby spinach
  4. Whisk the eggs and egg whites together until fluffy and pour into pan
  5. Distribute the chopped pepperoni and the mozzarella cheese evenly over the eggs.
  6. Spoon the ricotta cheese evenly over the top
  7. Spoon the Rustico sauce over the top of it all
  8. Bake at 350 degrees for about 25 minutes.  Remove from oven, sprinkle the top with parmesan cheese and return to oven for 5 minutes or just until the eggs are set in the center.  DO NOT OVERCOOK.
  9. Remove from oven and serve hot, or cool and slice and wrap in plastic wrap and store in the refrigerator.
