Pepperoni Pizza Frittata
If it has the word pizza in it everyone will at least give it a try. With pepperoni, olives and 3 cheeses this hits high on the mmmmm good meter.
Ingredients:
- 17 Egg Whites
- 4 Eggs
- 10 Slices Pepperoni, Chopped
- 1/2 cup Trader Joe's Rustico Sauce (Or a Low Sugar Pasta Sauce With Less Than 45 Calories/Half cup)
- 1/4 cup Low Fat Ricotta Cheese
- 3 ounces Baby Spinach, Chopped
- 2 ounces Trader Joe's Shredded Lite Mozzarella Cheese
- 2.25 ounce Can Sliced Black Olives, Drained
- 6 tablespoons Parmesan Cheese, Shredded
- 1/2 teaspoon Granulated Garlic
- 1 tablespoon Dried Chopped Onion
- 1 tablespoon Parsley Flakes
- 1/2 teaspoon Oregano
- 1/4 teaspoon Dried Red Peppers (If You Like It Spicy)
Directions:
- Preheat oven to 350 degrees
- Spray a 13 x 9 x 2 pan with non stick spray
- Line the bottom of the pan with the baby spinach
- Whisk the eggs and egg whites together until fluffy and pour into pan
- Distribute the chopped pepperoni and the mozzarella cheese evenly over the eggs.
- Spoon the ricotta cheese evenly over the top
- Spoon the Rustico sauce over the top of it all
- Bake at 350 degrees for about 25 minutes. Remove from oven, sprinkle the top with parmesan cheese and return to oven for 5 minutes or just until the eggs are set in the center. DO NOT OVERCOOK.
- Remove from oven and serve hot, or cool and slice and wrap in plastic wrap and store in the refrigerator.
