Pizza Egg Muffins
These are a great grab and go breakfast, lunch or snack. Pop one in the microwave at 50% power for about 2 minutes and enjoy.
Ingredients:
- 32 ounces of Egg Substitute Like Egg Beaters
- 12 Slices Canadian Bacon
- 3/4 cup Low Fat Ricotta Cheese
- 4 ounces Trader Joe’s Lite Shredded Mozzarella Cheese
- 1/2 cup Trader Joe’s Pizza Sauce
Directions:
- Preheat oven to 350 degrees
- Spray a 12 cup muffin pan with non stick spray
- Place one round of Canadian bacon in each muffin cup
- Follow with the ricotta cheese - just “blop” it into the muffin cups
- Add the eggs to the muffin cups
- Add the pizza sauce to the center of each cup
- Top with the shredded mozzarella cheese
- Bake at 350 for about 30 minutes, just until done
- Remove from oven, cool and run a knife around the edge of each muffin cup to loosen and remove from pan. Serve warm or wrap and store in the frig for reheating
