Pork Loin Portabella in The Crock Pot
Cold weather means take out the crock pot and here’s a recipe that takes about 10 minutes to toss together, 4-5 hours to cook and then fills the house with delicious smells and our bodies with healthy delicious food.
Ingredients:
- 2 pound Pork Loin Roast, All External Fat Trimmed
- 1 Box of Trader Joe’s Creamy Portabella Soup
- 1 Box (11 oz) of Water
- 16 oz of Baby Bella Mushrooms (Crimini), Sliced
- 1 Onion Diced
- 2 Cloves Garlic
- 1 teaspoon Sea Salt
- 1/2 teaspoon Pepper
- 3/4 teaspoon Thyme
- 3/4 teaspoon Sage
Directions:
- Spray crock pot with non stick spray
- Add onion, mushrooms, garlic mushroom soup and water to crock pot and stir together to mix well
- Make a rub of the salt, pepper, sage and thyme and rub into the pork roast
- Set the pork roast into the crock pot and spoon liquid over it
- Set the crock pot on low and cook for 4-5 hours
- Remove roast from crock pot and using 2 forks shred the meat. Add the meat back to the crock pot, stir and serve
