Pork Tenderloin and Pineapple Kabobs
It’s grilling season and I am always on the hunt for new favorites. This marinade would work with shrimp, or beef as well. The nutrition info I’ve given you is for pork tenderloin.
Ingredients:
- ½ cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon lime juice
- 1 teaspoon sriracha sauce (or more if you like it HOT)
- 1 tablespoon sesame oil
- 1 teaspoon ground ginger
- 1 teaspoon minced garlic
- 2 red bell peppers cut into cubes
- 1 pound pork tenderloin, trimmed and cut into 1 inch pieces
- 20 cubes of fresh cut pineapple
- 1 teaspoon sesame seeds for garnish
- 3 green onions thinly sliced for garnish
- 10 skewers - if you use bamboo soak them in water for about 20 minutes before using so they don’t burn up on the grill
Directions:
- In a large Ziploc bag add the first 8 ingredients (soy sauce through garlic)
- Then add the pork cubes, seal and shake together to combine well and coat the pork.
- Refrigerate for one hour, turning occasionally
- Heat your outdoor grill (or indoor grill pan) and lightly grease the grates with non stick cooking spray
- Thread the skewers with the marinated pork, pineapple and red pepper, alternating back and forth
- Grill for about 2 minutes on each side until fully cooked
- Garnish with the green onions and sesame seeds and serve
