Protein Pumpkin Pudding

I love this recipe for the holidays.  It works for breakfast (add some granola), lunch (I’ve added some almonds to it), or a snack/dessert (as is or maybe with a little bit of crushed honey graham crackers on top).  My 12 year old granddaughter loves it, my husband loves it, and folks who I served it to “unknowingly” loved it as well.  It is a winner for sure.  Thank you Michael May for giving me the basic recipe to “tweak” but adding the pumpkin to it and making it protein and a veggie.

  1. Blend all ingredients together in a large bowl until the color and consistency is even throughout.
