Puerto Rican Shredded Pork

I found this recipe in a magazine and it looked absolutely delicious.  Serve the pork in warm tortillas or just in lettuce wraps topped with some Pico de Gallo or chopped cilantro.  Since it all gets tossed in a crock pot it’s easy too.  My favorite kind of food- high protein, low calorie, delicious and easy.  What do you think?


Ingredients:

Directions:

  1. Poke 3-5 holes in the pork with a sharp knife and stuff with half of the crushed garlic.
  2. Warm the oil in a large skillet over medium high heat.
  3. Add the pork and brown on all sides…about 6-8 minutes
  4. Combine the remaining ingredients in a blender and blend 3 to 5 seconds until evenly combined.
  5. Place pork in crock pot.
  6. Pour liquid mixture over pork and let marinate about 10 minutes on each side
  7. Cover and cook on low in slow cooker for 8 hours.
  8. Remove pork and shred using 2 forks on a large cutting board.
  9. Remove all but 1 cup of liquid from crock pot.
  10. Return shredded pork to crock pot and cook another 15-30 minutes.

Nutrition:  Makes 8 servings, each with around
