Quick and Easy Tortilla Soup
Who doesn’t like a recipe for something they can toss together and have on the table in less than ½ hour for the whole family? I know there are just some days when soup is just what’s for dinner.
Ingredients:
- 1 quart of chicken stock
- 4 tablespoons fresh lime juice
- ½ cup chopped avocado
- 5 ounces cooked chicken, torn into shreds
- 1/3 cup chopped tomato
- ¼ cup minced red onion
- ¼ cup minced fresh cilantro
- ¼ cup shredded sharp cheddar
- 2 teaspoons minced fresh jalapeno pepper
- ¼ teaspoon sea salt
- 15 corn tortilla chips
Directions:
- In a large saucepan bring the chicken stock and 2 tablespoons of the lime juice to a boli over medium high heat
- Toss the avocado with the remaining 2 tablespoons of lime juice in a medium bowl.
- Add the chicken, tomato, onion, cilantro, cheddar, jalapeno and salt.
- Divide the chicken mixture and tortilla chips among 5 bowls
- Pour the broth over each
- Serve - can be garnished with fresh cilantro and a thin slice of lime
