Quinoa & Black Bean Casserole
Looking for another way to use quinoa? Here’s a vegetarian dinner that’s filling, warm and yummy and sure to please.
Ingredients:
- 1 cup cooked quinoa (which is about 1/3 cup uncooked)
- 3 cups cooked black beans or 2 15 ounce cans drained and rinsed
- 2 large sweet potatoes peeled and shredded
- 1 cup shredded low fat cheddar cheese
- 1 Tablespoon ground cumin
- 2 eggs
- 1 cup salsa
- 2 Tablespoons fresh cilantro for garnish
- Optional - 1Tablespoon Fage 0% Greek yogurt for garnish
Directions:
- Preheat oven to 350 degrees F
- Spray a 9 x 9 casserole dish with non stick spray - I use my Misto with olive oil
- Peel and shred the sweet potatoes
- In a large bowl mix the quinoa, black beans, sweet potatoes, ½ of the shredded cheese, cumin.
- In a small bowl mix together the eggs and the salsa
- Pour the egg/salsa mixture over the vegetables
- Pour the combined mixtures into the prepared casserole dish
- Sprinkle the remaining cheese over the top
- Bake uncovered for 30 minutes
- Garnish with cilantro and if desired Greek yogurt
This makes 6 servings at around:
- 260 calories and
- 25 grams protein per serving.
