Quinoa & Black Bean Casserole

Looking for another way to use quinoa?  Here’s a vegetarian dinner that’s filling, warm and yummy and sure to please. 


Ingredients:

Directions:

  1. Preheat oven to 350 degrees F
  2. Spray a 9 x 9 casserole dish with non stick spray - I use my Misto with olive oil
  3. Peel and shred the sweet potatoes
  4. In a large bowl mix the quinoa, black beans, sweet potatoes, ½ of the shredded cheese, cumin.
  5. In a small bowl mix together the eggs and the salsa
  6. Pour the egg/salsa mixture over the vegetables
  7. Pour the combined mixtures into the prepared casserole dish
  8. Sprinkle the remaining cheese over the top
  9. Bake uncovered for 30 minutes
  10. Garnish with cilantro and if desired Greek yogurt
