Ricotta Cheese Omelet
Finding tasty soft foods for my 10 days of soft foods after my latest surgery and for later, after fills is my new challenge. Here’s one that works for breakfast, lunch or dinner and is delicious.
Ingredients:
- 1 egg, 1 egg white
- ¼ cup fat free ricotta
- ¼ cup marinara sauce (mine is 45 calories per ½ cup)
- 1 teaspoon grated parmesan
Directions:
- Spray a small frying pan with non-stick spray and heat to medium high
- Beat the egg and egg white together thoroughly (I use a whisk) and pour into the heated pan
- While the eggs begin cooking take the ricotta cheese and heat it in the microwave on ½ power for about 45 seconds (until warm and almost runny)
- As the omelet begins to set in the pan add the ricotta cheese to one ½ of it and fold over and allow it to continue cooking and setting
- Meanwhile heat the marinara sauce in the microwave at half power for about 40 seconds until hot
- Slide the omelet onto a plate, top with the marinara and add the teaspoon of grated parmesan cheese
