Rotisserie Chicken, Spinach, and White Bean Stew

This is the quick and clean version of a recipe previously presented here.  It’s lower in calories, higher in protein, and has loads of taste.  It’s amazing how many different ways we can use rotisserie chicken, and some basic chicken stock, toss it in a pot with some other ingredients, and have a super delicious band friendly meal that everyone around you will enjoy as well.


Ingredients:

Directions:

  1. Put stock into a pot and heat on medium high until thoroughly warm, (I bring it just before boiling)
  2. Add chicken drained can of beans and baby spinach
  3. Continue cooking everything is thoroughly heated through
  4. Place in bowls and top each with 1 Tablespoon Pesto and serve

That’s all there is to it.  Could not be any simpler, now could it?

 Bonus Hint:  I often turn my oven to 175 and place my bowls in there to warm up so that I am serving stews, or soups, in nice heated bowls that keep the food hot all the way to the last drop.
