Salmon With Blueberry-Mango Salsa
I love salmon. It is one of my favorite fish. I always buy wild caught salmon because the thought of eating fish that has been “farmed” and fed cornmeal kind of turns me off, but that’s me. Many folk love all kinds of salmon. We have had reasonably priced fresh salmon most of the summer here in California so I have been looking for new ways to prepare and serve it and this one is great because it is quick to prepare, and has lots of taste combinations to enjoy.
Ingredients:
- 1/3 cup blueberries
- 1/3 cup peeled, diced mango
- 2 Tablespoons minced red onion
- 2 Tablespoons minced red bell pepper
- 1 Tablespoon minced fresh cilantro
- 1 Tablespoon fresh lime juice
- ½ teaspoon minced jalapeno pepper
- 2 teaspoons sugar (or Splenda works well here too)
- ¼ teaspoon sea salt
- Olive oil spray (I use my Misto)
- Four, 4 ounce salmon fillets
- Pinch of sea salt and pepper
Directions:
- Combine blueberries, mango, onion, pepper, cilantro, lime juice, jalapeno, sugar (Splenda), and salt in a medium bowl. Crush lightly with a fork to release the juices. Set aside.
- Spray a large pan with olive oil spray and heat over a medium high stove. Season the salmon fillets with salt and pepper and sear for 3-5 minutes per side, or until just cooked through.
- Serve the fillets with salsa and ENJOY!
