Sausage and Spaghetti Squash Casserole

On most Sunday’s I have my daughter and my 3 grandkids over for dinner.  It’s nice for all of us to get together and share a meal.  I am always trying to create new and exciting dishes that the kids will like and eat right along with the adults.  This one was a winner.  EVERYONE (except me) went back for seconds.  It is tasty, healthy and packs a protein punch. 


Ingredients:

Directions:

  1. Preheat oven to 350 degrees
  2. Spray a 13 x 9 x 2 pan with non stick spray
  3. Layer the ingredients as follows - spaghetti squash, then summer squash, then peppers, then sausage
  4. Top with the pasta sauce and finally the grated cheese
  5. Bake at 350 for about 30 minutes to make sure everything is hot
  6. Serve and enjoy!
  7. My grandkids added more cheese at the table.  I added dried red chili peppers because I love the heat
