Sausage and Spaghetti Squash Casserole
On most Sunday’s I have my daughter and my 3 grandkids over for dinner. It’s nice for all of us to get together and share a meal. I am always trying to create new and exciting dishes that the kids will like and eat right along with the adults. This one was a winner. EVERYONE (except me) went back for seconds. It is tasty, healthy and packs a protein punch.
Ingredients:
- 8 cups cooked spaghetti squash
- 8 chicken sausages (I used artichoke/mozzarella that were 140 calories and 16 grams of protein each) cut into coins
- 4 cups of Trader Joe’s Rustico pasta sauce (or any other that is 45 calories per ½ cup)
- 1 pound baby summer squash chopped
- 6 mini sweet peppers chopped
- 4 Tablespoons grated parmesan cheese
Directions:
- Preheat oven to 350 degrees
- Spray a 13 x 9 x 2 pan with non stick spray
- Layer the ingredients as follows - spaghetti squash, then summer squash, then peppers, then sausage
- Top with the pasta sauce and finally the grated cheese
- Bake at 350 for about 30 minutes to make sure everything is hot
- Serve and enjoy!
- My grandkids added more cheese at the table. I added dried red chili peppers because I love the heat
