Shrimp, Baby Squash, Mini Sweet Peppers Poached In Tomatillo Salsa

Another quick, easy, satisfying, and healthy dinner.


Ingredients:

Directions:

  1. Slightly wilt the spinach in a wok or large frying pan and divide between 2 bowls and set aside
  2. Pour jar of salsa into wok or large frying pan and add squash and peppers.
  3. Bring to a low boil and simmer covered for about 5 minutes until squash has almost cooked
  4. Add shrimp, cover and bring back to a light boil tossing all ingredients to mix.
  5. Immediately reduce heat to simmer, cover and cook for about 5 minutes until shrimp has cooked through (the color changes form transparent to white).  Do not overcook.
  6. Pour over spinach in the bowls and top with the cheese and serve and enjoy.
