Shrimp, Baby Squash, Mini Sweet Peppers Poached In Tomatillo Salsa
Another quick, easy, satisfying, and healthy dinner.
Ingredients:
- 1 jar of Trader Joe’s Tomatillo Salsa
- 8 oz. of Frozen uncooked Trader Joe’s Argentinian shrimp thawed
- 2 cups quartered baby squash
- 4 cups baby spinach
- 4 sweet mini sweet peppers coarsely chopped
- 1 ounce Trader Joe’s Light shredded mozzarella cheese
Directions:
- Slightly wilt the spinach in a wok or large frying pan and divide between 2 bowls and set aside
- Pour jar of salsa into wok or large frying pan and add squash and peppers.
- Bring to a low boil and simmer covered for about 5 minutes until squash has almost cooked
- Add shrimp, cover and bring back to a light boil tossing all ingredients to mix.
- Immediately reduce heat to simmer, cover and cook for about 5 minutes until shrimp has cooked through (the color changes form transparent to white). Do not overcook.
- Pour over spinach in the bowls and top with the cheese and serve and enjoy.
