Shrimp In A Packet
Shrimp are one of my favorite protein sources. Not only do they taste good, they are also high in protein, and low in calories. These packets can be cooked outside on the grill or in a 400 degree oven inside. Enjoy! This would work well for scallops too.
Ingredients:
- 1 pound of shrimp peeled and deveined
- ½ teaspoon coriander
- ½ teaspoon cumin
- ½ teaspoon paprika
- ¼ teaspoon cayenne
- Pinch of allspice
- ¼ teaspoon sea salt
- 10 ounces baby spinach
- 1 Tablespoon olive oil
Directions:
- Mix coriander, cumin, paprika, cayenne, allspice and 1/8 teaspoon of salt in a small bowl
- Place the shrimp in a large bowl, add the spice mixture and toss to coat. Refrigerate for 30 minutes
- Add the oil and the additional 1/8 teaspoon sea salt to the shrimp and combine thoroughly
- Cut four 15x12 inch sheets of heavy duty aluminum foil
- Divide the spinach and the shrimp evenly among the 4 pieces of foil
- Bring the edges of each sheet together and fold tightly to seal
- Place on grill preheated to medium high, or in 400 degree oven. Close grill cover and cook until spinach is wilted and shrimp are opaque (about 5-7 minutes)
- Serve immediately
