Shrimp Poached In Tomatillo Avocado Salsa

I wanted to make some shrimp I had in the freezer and was thinking about different ways to prepare it and decided that I liked the flavor of the new salsa I had just bought at Costco enough to cooking the shrimp with it.  The result - My husband insisted I share the recipe with all of you and says it would be awesome over Shirataki noodles, spaghetti squash, steamed summer squash - well, you get the idea.  I served it tonight in a bowl, with my veggie on the side.


Ingredients:

Directions:

  1. Heat a 10 inch frying pan on medium
  2. Add the salsa
  3. Bring to a low boil
  4. Add the shrimp, stirring to cover and coat
  5. Bring to a low boil again
  6. Reduce heat, stir, cover and cook until shrimp are done (no more than 5 minutes)
  7. Remove from heat and serve.
