Shrimp Taco Bites
It’s time to put on our party hats and come up with some yummy appetizers to make our holiday tables Healthy as well as yummy. This one works well for me and is attractive enough to serve or bring to any party.
Ingredients:
- 24 large raw shrimp peels and tails removed
- 1 teaspoon grated lime zest
- 1 tablespoon lime juice
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- ½ cup salsa
- 2 cucumbers (peeled if you like) sliced into 24 slices
- Cilantro to taste
Guacamole Ingredients:
- 2 Haas avocados, halved, seeded and peeled
- 1 lime juiced
- ½ teaspoon ground cumin
- ½ medium onion minced
- 1 Roma tomato seeded and diced
- ½ jalapeno pepper seeded and minced
- 1 tablespoon chopped cilantro
- 1 clove garlic minced
- Sea salt and freshly ground black pepper
Directions:
- Preheat oven to 375 degrees.
- Combine lime zest, lime juice, chili powder, cumin, sea salt and pepper to taste in a small bowl
- Place the shrimp on a baking sheet and sprinkle the seasoning mixture over the shrimp
- Bake in preheated oven until shrimp turn pink - about 5-7 minutes
- While the shrimp are baking prepare the guacamole by mashing the avocado with a fork or potato masher in a bowl and add the other guacamole ingredients (lime, cumin, onion, tomato, jalapeno, cilantro, garlic and salt and pepper to taste) stirring until everything is well blended
Arranging the shrimp taco bites:
- On a platter assemble by placing 1 teaspoon guacamole on a cucumber slice followed by a shrimp. Top with ½ teaspoon salsa and cilantro to taste
