Simply Mahvelous Mediterranean Omelet
It’s amazing how changing the flavors in an omelet make it a totally new and delicious experience.
Ingredients:
- 2 Eggs
- 5 Egg Whites
- 5 Slices Turkey Chopped
- 1 cup Spinach, Chopped
- 2 ounces Trader Joes Lite Mozzarella Cheese Shreds
- 1 ounce Fresh Mushrooms, Chopped
- 3 tablespoons Trader Joe’s Eggplant Garlic Spread
- Garlic Powder, Dried Onions, Sea Salt and Pepper to Taste
Directions:
- Spray a frying pan with non-stick spray and heat to medium
- Add turkey, spinach, mushrooms, and spices and sauté until spinach and mushrooms are soft. Remove to a plate
- Clean pan with a paper towel and respray with non-stick spray. Add egg/egg white mixture that has been thoroughly whisked together to pan. Cover and allow to cook for about 2-3 minutes or until eggs are about 80% set. (check frequently)
- Add the turkey mixture to 1/2 of the eggs (one side of the pan) and top with eggplant spread and then sprinkle the cheese. Fold “empty” side of eggs over the other side and add two drops of water to pan and cover and cook until cheese melts (about another minute or so)
- Remove omelet from pan, cut and serve hot
