Skillet Turkey Parmesan
From refrigerator to table in 12 minutes, AND it tastes good too! I am all for it. How about the rest of you? I might serve this over pasta for others, or I love thin sliced summer squash lightly steamed as a base for “red sauce” dishes. How about spaghetti squash, baby spinach, or even Shirataki noodles? Whatever you choose, be sure to add the calories to your totals.
Ingredients:
- 4 - four ounce turkey cutlets flattened (or turkey tenders as they are sometimes called- basically, boneless, skinless slices of raw turkey breast meat)
- 1/8 teaspoon sea salt
- 1/8 teaspoon fresh ground pepper
- 1 ½ cups of marinara sauce of 45 calories per ½ cup (careful label reading is required here I use Trader Joe’s Rustico sauce but have found one in this calorie range in every market I have been to)
- ½ cup shredded light mozzarella cheese ( I use Trader Joe’s it is 45 calories/5 grams protein per ounce)
- 2 Tablespoons grated parmesan cheese
Directions:
- Spray a large skillet with Olive Oil spray - I use my Misto
- Place over medium heat
- Add cutlets, cook until golden brown on the bottom, about 2 minutes
- Turn cutlets over and season with salt and pepper
- Heat until cooked through, about 3 minutes
- Add marinara sauce
- Sprinkle cheeses over the cutlets
- Simmer covered until cheeses are melted, about 2 minutes
- Serve and enjoy!
