Slow Cooker Salsa Chicken
I love slow cooker recipes. I get the ingredients together the night before and then toss them in the slow cooker in the morning and dinner is done by dinner time with no fuss. I rarely think of using my slow cooker in the summer, but this one is perfect. A side salad and dinner is done without heating up the kitchen.
Ingredients:
- 2 pounds boneless skinless chicken breast
- 1 cup salsa
- 1 cup diced canned tomatoes
- 2 Tablespoons Taco seasoning
- 1 cup diced onions
- ½ cup diced celery
- ½ cup shredded carrots
- ½ cup water
- 3 Tablespoons 0% Greek yogurt
Directions:
- Place the chicken in slow cooker
- Sprinkle Taco seasoning over meat
- Layer the vegetables and salsa on top
- Pour ½ cup water over mixture and put cover on slow cooker
- Cook on low for 6-8 hours until chicken shreds easily.
- Break up and shred chicken with two forks
- Stir in Greek yogurt and serve
- You can add some shredded cheese and top with green onion or fresh cilantro for some more flavors. If you do, don’t forget to measure and count the additional calories/protein.
