Slow Cooker Salsa Chicken

I love slow cooker recipes.  I get the ingredients together the night before and then toss them in the slow cooker in the morning and dinner is done by dinner time with no fuss.  I rarely think of using my slow cooker in the summer, but this one is perfect.  A side salad and dinner is done without heating up the kitchen. 


Ingredients:

Directions:

  1. Place the chicken in slow cooker
  2. Sprinkle Taco seasoning over meat
  3. Layer the vegetables and salsa on top
  4. Pour ½ cup water over mixture and put cover on slow cooker
  5. Cook on low for 6-8 hours until chicken shreds easily.
  6. Break up and shred chicken with two forks
  7. Stir in Greek yogurt and serve
  8. You can add some shredded cheese and top with green onion or fresh cilantro for some more flavors.  If you do, don’t forget to measure and count the additional calories/protein.
