Slow Cooker Turkey Breast Tender Fajitas
Who said you must go out to get good tasting Mexican food? You can prepare it right in your own kitchen. Assemble the ingredients the night before, toss it together in the morning, leave the slow cooker on low and have a delicious family dinner all ready by the time you get home in the evening. Top with some cheese and avocado or try some Greek yogurt instead of sour cream and enjoy.
Ingredients:
- 2 pounds Turkey Breast Tenders
- 2 Each Red, Green and Yellow Bell Peppers, Julienned
- 2 Each Yellow Onions Sliced
- 4 Cloves Minced Garlic
- 3 1/2 teaspoons Chili Powder
- 2 1/2 teaspoons Cumin
- 2 tablespoons Fresh Lime Juice
- 1 teaspoon Paprika
- 1 teaspoon Sea Salt
- 1 teaspoon Pepper
- 1 tablespoon Honey
- 3/4 teaspoon Coriander
- 1/2 teaspoon Oregano
- 1/8 teaspoon Dried Chili Pepper (if you like it spicy)
Directions:
- Layer onions and peppers in the bottom of the slow cooker
- Top with the garlic
- In a small bowl mix together the chili powder, Chili pepper, cumin, paprika, coriander, oregano, salt and pepper
- Add to the slow cooker and with wet hands mix everything together
- Cook on high for about 4 hours, or until turkey is cooked through, or low for 6-8 hours.
- Remove turkey and shred with 2 forks
- Whisk together honey and lime juice and add, along with the shredded turkey to the slow cooker
- Add any additional seasonings to taste and gently toss
- Serve warm in a lettuce leaf or tortilla topped with cheese, avocado, cilantro and possibly some refried beans or over riced cauliflower. Be sure to count any additions in the nutritional statistics since they are only for the fajitas out of the crock pot
