Spaghetti Squash Lasagna
Want something warm and tasty that the whole family can enjoy? This will do it. Taking the time to prep the spaghetti squash is worth it since the rest tosses together quickly.
Ingredients:
- 6 cups Spaghetti Squash, Cooked
- 4 Precooked Chicken Sausage (I used Sabatino’s Garlic Mozzarella), Cut into Coins
- 3/4 cup Low Fat Ricotta Cheese
- 1 Jar (18 ounces) Trader Joe’s Traditional Marinara Sauce
- 5 ounces Trader Joe’s Lite Mozzarella Cheese Shreds
- 4 tablespoons Grated Parmesan Cheese
Directions:
- To prepare the Spaghetti Squash cut lengthwise and remove the seeds. Place cut side down in a baking dish and add about 1/4 inch of water. Bake in a preheated 400 degree oven for about 45 minutes- 1 hour until cooked. Cool cut side up and then shred with a fork to get your “spaghetti”
- In a 13 x 9 x 2 pan that has been sprayed with non stick spray layer the ingredients, spreading them as evenly as possible:

- Spaghetti squash;
- 1/2 of the marinara sauce;
- Ricotta cheese (place dots of it then spread slightly);
- Chicken sausage coins;
- 1/2 of the marinara sauce;
- Mozzarella cheese;
- Finally sprinkle with the parmesan cheese;
- Bake in a preheated 350 degree oven for 30-40 minutes until cheese is thoroughly melted and all ingredients are bubbling hot
- Remove from oven and serve immediately
