Spiced Pork Tenderloins With Mango Salsa
Barbecue season officially opens with Memorial Day Weekend and I am always looking for new outdoor grilling recipes. Since I live in Southern CA my grilling season is never ending so I was thrilled to discover this one. I might add some grilled veggies with this and call it a meal!
Ingredients - Mango Salsa:
- 2 ripe mangos
- 2 kiwis
- 1 Tablespoon fresh ginger
- 1 Tablespoon fresh cilantro
- 2 Tablespoons seasoned rice vinegar
Directions - Mango Salsa:
- Peel and coarsely chop the mangos
- Peel and coarsely chop the kiwi
- Peel and grate the fresh ginger
- Mince/chop the fresh cilantro
- In medium bowl combine all of the above ingredients. Cover and refrigerate.
Ingredients - Spiced Pork Tenderloins:
- 2 whole pork tenderloins (about 1 pound each)
- 3 Tablespoons flour
- 1 teaspoon sea salt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon ground cinnamon (I LOVE cinnamon - I will use more)
- ½ teaspoon ground ginger
Directions - Spiced Pork Tenderloins:
- Preheat/prepare outdoor grill for direct grilling over medium heat
- Cut each tenderloin lengthwise almost in half to open and spread flat
- Place each tenderloin between 2 sheets of plastic wrap and with meat mallet pound to about ¼ inch thickness
- Cut each tenderloin into 4 pieces
- On wax paper mix the flour and all of the seasonings
- Add pork to spice mixture and turn to coat each slice evenly
- Place pork on hot grill. Cover and cook for about 3 minutes, turn and finish cooking. You want both sides lightly browned.
- Place on serving dish and spoon mango salsa over pork
