Spiced Pork Tenderloins With Mango Salsa

Barbecue season officially opens with Memorial Day Weekend and I am always looking for new outdoor grilling recipes.  Since I live in Southern CA my grilling season is never ending so I was thrilled to discover this one.  I might add some grilled veggies with this and call it a meal!


 

Ingredients - Mango Salsa:

Directions - Mango Salsa:

  1. Peel and coarsely chop the mangos
  2. Peel and coarsely chop the kiwi
  3. Peel and grate the fresh ginger
  4. Mince/chop the fresh cilantro
  5. In medium bowl combine all of the above ingredients.  Cover and refrigerate.

Ingredients - Spiced Pork Tenderloins:

Directions - Spiced Pork Tenderloins:

  1. Preheat/prepare outdoor grill for direct grilling over medium heat
  2. Cut each tenderloin lengthwise almost in half to open and spread flat
  3. Place each tenderloin between 2 sheets of plastic wrap and with meat mallet pound to about ¼ inch thickness
  4. Cut each tenderloin into 4 pieces
  5. On wax paper mix the flour and all of the seasonings
  6. Add pork to spice mixture and turn to coat each slice evenly
  7. Place pork on hot grill.  Cover and cook for about 3 minutes, turn and finish cooking.  You want both sides lightly browned.
  8. Place on serving dish and spoon mango salsa over pork
