Spinach Stuffed Chicken Thighs
Cream cheese, spinach, parmesan cheese and chicken… What’s not to like? This will take a few minutes to put together, but the whole family will enjoy, and you will stay right on target for getting your protein.
Ingredients:
- Six boneless, skinless chicken thighs (4 ounces each)
- Six tablespoons cream cheese
- 2 tablespoons bacon bits
- Handful of baby spinach
- 3 tablespoons grated parmesan cheese
Directions:
- Slice each chicken thigh so you’ll have enough surface area to roll up once you fill it
- Prepare a baking dish by spraying with non-stick spray
- Preheat oven to 350 degrees
- Place chicken thigh on flat work surface
- Add some spinach, 1 tablespoon cream cheese and some bacon bits
- Roll up the chicken thigh and place seam side down in baking dish
- Repeat with all of the chicken thighs
- Sprinkle with parmesan cheese and bake for 30 minutes or until chicken is cooked through
- Serve immediately - I might serve over a bed of lightly sautéed spinach
