Spinach Stuffed Chicken Thighs

Cream cheese, spinach, parmesan cheese and chicken…  What’s not to like?  This will take a few minutes to put together, but the whole family will enjoy, and you will stay right on target for getting your protein.


Ingredients:

Directions: 

  1. Slice each chicken thigh so you’ll have enough surface area to roll up once you fill it
  2. Prepare a baking dish by spraying with non-stick spray
  3. Preheat oven to 350 degrees
  4. Place chicken thigh on flat work surface
  5. Add some spinach, 1 tablespoon cream cheese and some bacon bits
  6. Roll up the chicken thigh and place seam side down in baking dish
  7. Repeat with all of the chicken thighs
  8. Sprinkle with parmesan cheese and bake for 30 minutes or until chicken is cooked through
  9. Serve immediately - I might serve over a bed of lightly sautéed spinach
