Spinach and Feta Frittata
I love spinach and feta cheese mixed together in a quiche. When we remove the calories and carbs in the crust we get a great frittata that could work for breakfast, brunch, lunch or dinner. You choose!
I would serve a wedge with some sliced watermelon and maybe a few blueberries to make the plate pretty and oh so sweet…
Entire pie pan is around 450 calories and 37 grams protein so you can portion as desired.
Ingredients:
- 10 oz frozen spinach, thawed and liquid squeezed out
- 1/2 cup scallions, chopped
- 2 T chopped fresh dill
- 2 T chopped fresh parsley
- 1/2 cup reduced fat crumbled feta
- 2 T grated Asiago cheese
- 2/3 cup fat free milk
- 1 tsp olive oil
- 1 cup egg substitute
- 1/2 tsp kosher salt (or sea salt)
- fresh cracked pepper to taste
- cooking spray
Directions:
- Preheat oven to 400 degrees
- Lightly spray a pie pan with cooking spray (I always use my olive oil spray)
- Mix all ingredients except grated Asiago and pour into pie pan
- Top mixture with grated Asiago cheese
- Bake 28 - 33 minutes until knife inserted in center comes out clean
- Let stand at least 5 minutes before serving
