Springtime Frittata
Most Sundays I make breakfasts for several days by baking an egg beater frittata in the oven and slicing it into 8 servings which vary from 120-180 calories and 18-21 grams of protein depending strictly on what I add to the egg beaters. Today I decided to use a few slices of wonderful, tasty, rosemary ham that I sampled and fell in love with at Trader Joe’s. It has proven to be a winner!
Ingredients:
- 32 ounces of Egg Beaters
- 7 ounces Trader Joe’s lite shredded mozzarella cheese
- ½ cup salsa fresco
- 2 cups chopped baby spinach
- 3 mini sweet peppers chopped
- 4 slices Trader Joe’s Rosemary Ham chopped
Directions:
- Preheat oven to 350 degrees
- Spray a 13x9x2 pan with non-stick spray
- Pour in egg beaters followed by all of the other ingredients
- Stir lightly to mix all
- Bake at 350 degrees until center is just done. Do not over-bake
- Cool and slice into 8 servings
- Wrap and refrigerate for microwave reheating or serve immediately and enjoy
