Springtime Frittata

Most Sundays I make breakfasts for several days by baking an egg beater frittata in the oven and slicing it into 8 servings which vary from 120-180 calories and 18-21 grams of protein depending strictly on what I add to the egg beaters.  Today I decided to use a few slices of wonderful, tasty, rosemary ham that I sampled and fell in love with at Trader Joe’s.  It has proven to be a winner!


Ingredients:

Directions:

  1. Preheat oven to 350 degrees
  2. Spray a 13x9x2 pan with non-stick spray
  3. Pour in egg beaters followed by all of the other ingredients
  4. Stir lightly to mix all
  5. Bake at 350 degrees until center is just done.  Do not over-bake
  6. Cool and slice into 8 servings
  7. Wrap and refrigerate for microwave reheating or serve immediately and enjoy
