Sunday Breakfast Bruschetta
Spray small frying pan with Pam or olive oil spray and just wilt the spinach - remove and set aside
Spray pan again if necessary and lightly brown (or heat) the soy crumbles - remove and set aside
Meantime in a 350 degree oven bake the 60 calorie tortilla for 6 minutes on each side until just toasty/crunchy and place on serving plate
Also grate ¼ oz of creamyTuscany cheese (from TJ’s) or other flavorful cheese
Warm 2 T of TJ’s bruschetta sauce in microwave
Spray pan again and add egg beaters - scramble the egg beaters adding in the spinach and soy crumbles throughout -
Place scrambled egg mixture on tortilla, spoon on the bruschetta sauce, add the grated cheese and DIG IN.
