Sunday Frittata
I try to prepare breakfasts and lunches for the week on Sunday morning before the rest of my family wakes up. This is today’s version of “Sandi’s Famous Frittatas”.
Ingredients:
- 18 Egg Whites
- 4 Eggs
- 4 cups Power Greens, Chopped
- 6 oz Lite Mozzarella Cheese Shreds
- 4 oz Can Diced Green Chilies
- 10 tablespoons Sliced Black Olives
- 4 tablespoons Bacon Bits
Directions:
- Preheat oven to 350 degrees
- Spray a 13 x 9 x 2 pan with non-stick spray
- Layer the power greens in the bottom of the pan
- Whisk eggs and egg whites together and pour over the greens
- Add bacon bits, chilies and olives, using a fork and a slight swirling motion to evenly distribute
- Top with shredded mozzarella
- Bake at 350 degrees for 30m-40 minutes, just until center springs back to touch. DO NOT OVERCOOK
- Remove from oven, serve immediately or cool and portion and wrap individually for reheating during the week
