Sweet and Spicy Meatballs
This recipe can be used as an appetizer, to pass on a platter with a toothpick in each meatball, or can be the protein portion of a lunch or dinner. You choose. I think they would go well with a single serving of black beans, or perhaps on top of some spaghetti squash with a bit of sauce added?
Ingredients:
- 20 ounces lean ground turkey
- ¾ cup canned crushed tomatoes
- 8 oz can of pineapple tidbits packed in juice drained
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- Dried red peppers or dried chipotle peppers to taste
Directions:
- Preheat oven to 350 degrees
- Spray a cookie sheet with non stick spray, or use parchment paper
- In a large bowl combine all of the ingredients. Mix thoroughly using your hands. Form mixture into 20 evenly sized meatballs, placing them on the cookie sheet evenly spaced.
- Bake for 15 minutes
- Gently turn the meatballs over and bake until fully cooked, about 5 more minutes.
