Sweet and Spicy Papaya Pico de Gallo

I LOVE Hawaiian papaya - it is sweeter and less fibrous than any others I have ever tasted.  I have eaten mango salsa many times, but never papaya…so I figured why not.  Here is the recipe I made, and it is fabulous, it can go alongside virtually anything - turkey burger, eggs, fish of any type, pork loin, or just have a spoonful out of the dish.  You can turn down the heat by reducing, or omitting the serrano pepper and/or the cilantro.

  1. Chop all the ingredients and mix together in a large bowl
  2. Transfer to a covered container and keep refrigerated
