Taco Salad With Ground Turkey
Wondering what to do for dinner? How about a taco salad minus the tortillas?
Ingredients:
- ½ cup prepared salsa
- 2 tablespoons 0% Greek yogurt
- 1 small onion
- 2 cloves garlic
- 8 ounces lean ground turkey
- 1 large plum tomato
- ½ cup canned kidney beans (I rinse all the salt off them first)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 tablespoons fresh cilantro
- 4 cups shredded romaine lettuce
- ¼ cup shredded Fat Free cheddar cheese
Directions:
- Chop the onion
- Mince the garlic
- Dice the tomato
- Chop the cilantro
- Combine the salsa and the Greek yogurt in a large bowl
- Spray a non stick skillet with olive oil (I use my Misto)spray and over medium heat sauté the onion and the garlic until soft stir it frequently This will take about 2 minutes
- Add turkey and cook until cooked through (2-3 minutes
- Add tomato, beans, cumin, chili powder and cook, stirring until the tomato starts to break down- about 2 minutes
- Remove from heat
- Stir in cilantro and 2 tablespoons of the salsa mixture
- Add lettuce to the remaining salsa mixture and toss to coat
- Divide the lettuce between two plates and top with the cooked meat mixture
- Sprinkle with cheese and serve
