Taco Spiced Frittata

Sunday morning food prep for the week and I wanted a different “flair” to my egg frittata.  Thought about it for a while and decided on using ground turkey instead of bacon bits and giving the entire dish the flavor of a taco without the tortilla…The result was eaten with zest and pleasure by all.  See what you think.


Ingredients:

Directions:

  1. Preheat oven to 350 degrees
  2. Spray a 13 x 9 x 2 pan with olive oil spray (I use my Misto) and set aside
  3. Spray a frying pan with olive oil spray and add 8 oz of turkey and ½ package of taco seasoning mix
  4. Brown meat stirring until just cooked throughout
  5. Pour off any fat/juices from frying pan and set aside to cool slightly
  6. Add egg beaters to 13 x 9x 2 pan
  7. Chop spinach and add to pan along with turkey, salsa and cheese
  8. Using a fork mix all into egg beaters and bake at 350 degrees until just done (center will spring back slightly)
  9. Cool and then cut into 8 pieces
