Taco Spiced Frittata
Sunday morning food prep for the week and I wanted a different “flair” to my egg frittata. Thought about it for a while and decided on using ground turkey instead of bacon bits and giving the entire dish the flavor of a taco without the tortilla…The result was eaten with zest and pleasure by all. See what you think.
Ingredients:
- 8 ounces of 93% lean ground turkey
- Package of Trader Joe’s Taco seasoning (or use your own…I just wanted to make it really easy)
- 32 ounces Egg Beaters
- 1 package (7 Oz) Kraft fat free shredded cheddar cheese
- ½ cup salsa
- 2 cups spinach
Directions:
- Preheat oven to 350 degrees
- Spray a 13 x 9 x 2 pan with olive oil spray (I use my Misto) and set aside
- Spray a frying pan with olive oil spray and add 8 oz of turkey and ½ package of taco seasoning mix
- Brown meat stirring until just cooked throughout
- Pour off any fat/juices from frying pan and set aside to cool slightly
- Add egg beaters to 13 x 9x 2 pan
- Chop spinach and add to pan along with turkey, salsa and cheese
- Using a fork mix all into egg beaters and bake at 350 degrees until just done (center will spring back slightly)
- Cool and then cut into 8 pieces
