Thai Green Curry Shrimp
I love shrimp, I love curry, and served over spaghetti squash that you have prepared and stored in the refrigerator, this meal can be on the table in less than 15 minutes. It’s a 3 ingredient meal - so what could be easier?
Ingredients:
- ½ cup Trader Joe’s Thai Green Curry Simmer Sauce
- 8 ounces Trader Joe’s Frozen Argentinean Shrimp
- 2 cups cooked Spaghetti Squash
Directions:
- Spray a 10 inch skillet with coconut oil spray and heat to medium
- Add the ½ cup of Green Curry Simmer Sauce and heat through to just before it is ready to bubble (2-3 minutes)
- Add the shrimp, toss well in the curry sauce to combine and cover and cook for about 2-3 minutes until shrimp is cooked through
- Meanwhile warm your pre-cooked spaghetti squash in the microwave until heated all the way through (50 % power for about 2-3 minutes in my microwave but they all vary)
- Remove the spaghetti squash from the microwave, cover with the shrimp and green curry mixture and enjoy
