Tomato/Basil/Fresh Mozzarella Appetizer

It’s time for Holiday open houses, dinner parties, buffets and the like.  The tables are laden with high calorie sweets and high carb foods and our will power is being tested at every turn.  My solution is to always be prepared.  That means frequently having a protein shake or a protein snack before I head out my door, and always showing up with a dish that I have prepared to share with others.  I do that selfishly so that I know exactly what is in at least one dish at the table.  During the holiday season I love making these appetizers because they pick up the colors of the season and look quite festive.


Ingredients: 

Directions:

  1. Wash the cherry tomatoes and basil leaves and dry thoroughly
  2. Take 1-2 basil leaves and add 1 mozzarella ball and 1 cherry tomato
  3. Skewer with your toothpick and place on serving tray
  4. When all are complete, drizzle each with a drop or so of balsamic vinegar
