Turkey Bolognese a La Sandi
Here's a recipe the entire family can enjoy. Put it over spaghetti squash, zoodles, cauliflower rice or just eat it out of a bowl topped with a bit of grated parmesan.
Ingredients:
- 1 lb Ground Turkey
- 28 ounce Can Crushed Tomatoes
- 4 Slices Center Cut Bacon, Cooked and Cut Into 1/2 Inch Pieces
- 5.5 oz Baby Bella Mushrooms, Sliced
- 1 Large Onion, Chopped
- 1 Large Carrot Chopped Fine
- 1 Stalk Celery, Chopped
- 4 Cloves Garlic, Minced
- 1/2 cup Dry White or Red Wine
- 1/2 cup Fresh Parsley, Chopped
- 2 teaspoons Oregano
- 1/4 teaspoon Nutmeg
- 1 teaspoon Basil
- 1/2 teaspoon Dried Hot Peppers
- Salt and Pepper to Taste
Directions:
- Spray a large frying pan with non stick spray (olive oil spray would be best) and heat to medium
- Add onion, carrot, celery, garlic and mushrooms and cook until tender, about 5-7 minutes
- Meanwhile in a pot cook the turkey, separating it with a fork until all the pink is gone(about 5 minutes)
- Add crushed tomatoes, wine, parsley, oregano, peppers, basil and nutmeg and the cooked carrots, onion, celery, garlic, mushrooms and bacon
- Mix well and simmer until thickened (about an hour) or until it's reached your desired consistency
- Add salt and pepper to taste
- Toss and serve with your choice of pasta substitute and top with grated parmesan and a sprig of fresh parsley. Be sure to add the calories/protein for whatever you are using for pasta and the cheese topping
