Turkey Bolognese a La Sandi

Here's a recipe the entire family can enjoy.  Put it over spaghetti squash, zoodles, cauliflower rice or just eat it out of a bowl topped with a bit of grated parmesan.

Ingredients:

Directions:

  1. Spray a large frying pan with non stick spray (olive oil spray would be best) and heat to medium
  2. Add onion, carrot, celery, garlic and mushrooms and cook until tender, about 5-7 minutes
  3. Meanwhile in a pot cook the turkey, separating it with a fork until all the pink is gone(about 5 minutes)
  4. Add crushed tomatoes, wine, parsley, oregano, peppers, basil and nutmeg and the cooked carrots, onion, celery, garlic, mushrooms and bacon
  5. Mix well and simmer until thickened (about an hour) or until it's reached your desired consistency
  6. Add salt and pepper to taste
  7. Toss and serve with your choice of pasta substitute and top with grated parmesan and a sprig of fresh parsley.  Be sure to add the calories/protein for whatever you are using for pasta and the cheese topping
